Getting into the swing of back-to-school time is tough for parents as well as kids, especially when it comes to dinner time. This recipe combines a kid-friendly favorite (chicken strips) with healthy veggies, and you can easily substitute different vegetables depending on your preference. The best part? Since everything bakes in the oven at once, you can step away from the stove and get a head start on homework time! (Hopefully they haven’t changed math again.)

Ingredients
Main Meal
4 boneless, skinless chicken breasts
2 large eggs
3 tbsp. extra virgin olive oil, divided
1 ½ c. panko breadcrumbs
2 tsp. paprika
1 ½ tsp. kosher salt, divided
1 c. all-purpose flour
2 c. broccoli florets
½ tsp. ground black pepper, divided
2 cloves garlic, minced and divided
2 sweet potatoes, peeled
Dipping Sauce
½ c. mayonnaise
2 tbsp. Dijon mustard
2 tsp. honey
Barbecue sauce or ketchup for serving, optional
Preparation
Preheat the oven to 375°F and line two baking sheets with parchment paper.
Slice the chicken breasts into strips.
In a medium bowl, add the eggs and 1 tbsp. of olive oil. Whisk to combine.
In a large bowl, combine the panko breadcrumbs, paprika, and 1 tsp. of salt.
Place the flour in another medium bowl.
Coat the chicken strips in the flour, then in the eggs, and then in the breadcrumbs. Place on one of the baking sheets.
In a large bowl, toss the broccoli florets with 1 tbsp. olive oil, ¼ tsp. salt, ¼ tsp. pepper, and half of the minced garlic. Arrange on half of the second baking sheet.
Cut the sweet potatoes in half lengthwise, then slice into half-moons.
Toss the sweet potatoes in a large bowl with the remaining tbsp. of olive oil, ¼ tsp. salt, ¼ tsp. pepper, and minced garlic. Place on the baking sheet next to the broccoli.
Bake both baking sheets simultaneously, until the veggies are browned and the chicken is crisp, about 20 minutes.
Make the dipping sauce by combining the mayonnaise, mustard, and honey in a small bowl.
Serve the chicken and veggies with the dipping sauce, barbecue sauce, and ketchup, if using.
