Slow Cooker Chicken Tacos

There’s nothing quite like a cozy meal to bring everyone together. Tender chicken and zesty spices combine in the slow cooker for this stress-free feast — perfect for your first football viewing party of the season! Add toppings like guacamole or salsa to create your own gameday favorite.

Ingredients


1 onion, thinly sliced

1 c. corn

1 can diced tomato, drained

1 large jalapeño, deseeded and diced

4 cloves garlic, minced

1 lime, juiced

6 boneless, skinless chicken thighs

12 corn tortillas

Guacamole (for topping)

Salsa (for topping)


Taco Seasoning:

2 tsp. cumin

2 tsp. oregano

1 ½ tsp. paprika

1 tsp. chili powder

½ tsp. black pepper

Salt, to taste



Preparation


  1. Combine cumin, oregano, paprika, chili powder, pepper, and salt in a small bowl. Stir and set aside.

  2. Place the onion, corn, jalapeño, tomatoes, garlic, and lime juice in a slow cooker.

  3. Place the chicken thighs on top of the veggies, and add half of the taco seasoning. Turn the chicken over and season with the remaining taco seasoning. Mix the chicken and veggies together until well combined.

  4. Cook on high for 3 hours or on low for 6 hours, until the chicken is cooked through.

  5. Remove the chicken and slice into small, diced pieces, then place them back in the slow cooker. Stir again and replace lid.

  6. Cook the chicken mixture for an additional 10 minutes so the flavors can settle.

  7. Using tongs or a slotted spoon, place the mixture on tortillas and add your choice of toppings.
