Steak Fajita Skewers



Spring has finally sprung, and baseball is in full swing, which means a third great season is heating up: grilling season. This recipe provides all the great flavors of fajitas without the time-consuming marinating and slicing, so you can go from meal prep to eating in under an hour. The tender steak and flavorful mix of fresh vegetables are a meal on their own, but for a full fajita experience, pair with warm tortillas, salsa, cheese, and fresh guacamole.





Servings: 8

Ingredients


8 bamboo skewers, soaked in water for 20 minutes

2 lb. sirloin steak, cut into 1-inch cubes

1 tbsp. cumin

1 tbsp. chili powder

1 tbsp. garlic powder

1 tsp. salt

1 tsp. pepper

2 green bell peppers, seeded and cut into 1-inch pieces

2 red bell peppers, seeded and cut into 1-inch pieces

1 large white onion, cut into 1-inch pieces


Preparation


  1. Preheat the grill to medium-high heat.

  2. Combine the cumin, chili powder, garlic powder, salt, and pepper in a medium bowl and stir. Add steak and mix until pieces are evenly coated.

  3. Slide a piece of steak down a skewer, followed by a piece of green pepper, then red pepper, and then onion. Continue until there is a 1-inch gap on the top of the skewer.

  4. Repeat with the remaining skewers.

  5. With grilling tongs, grease the surface of the grill by rubbing the grates with an oiled paper towel.

  6. Grill the skewers for 10-15 minutes with the lid closed, flipping them halfway through.

  7. Enjoy!
